The Cheesemaker & The Farmer
Allison Lakin fell in love with making cheese in 2002 when she accidentally became the cheesemaker for a small farm in Upstate New York. After many years of studying the craft of cheesemaking and dreaming, she launched Lakin’s Gorges Cheese in 2011. She makes fresh and aged cow’s milk cheeses.
Neal Foley came to love farming after an internship on a small dairy farm in Washington state. Many years after he began farming on his own he received culinary training at Ballymaloe Cookery School in Ireland in 2003. He has cooked in many restaurants and private homes since. In 2005 he started a Farm to Table catering company and the Gastrocast Podcast. Foley has been farming for 25 years and teaching cooking for the past 15.
In October 2016, Lakin and Foley settled on a 1700s farm in Waldoboro, Maine, which they christened East Forty Farm and Dairy. They completed a new Creamery at the end of 2017 which is the new home of Lakin’s Gorges Cheese. Foley set up his sawmill at the farm to provide building materials for farm expansion and wood products for local builders. 2018 will see the restoration of pastures and the expansion of a dairy herd of Jersey cows.
Lakin’s cheese is available at the farm store on OPEN days, alongside Foley’s handcrafted wood products.
